About Dog Tired Coffee

To whom it may concern,

Dog Tired Coffee is a specialty coffee roastery that is our passion project. We’re coffee lovers, and decided to bring the sort of coffee experiences we ourselves were seeking to our hometown. We stand by our product because we only offer coffee that we love. For us to love a coffee it has to meet two main criteria:

1) It has to be ethically sourced

It has to be ethically sourced, meaning we go out of our way to seek coffee from reliable importers that have done the footwork to make sure that the coffee farmers, and the environment they work in, are being treated ethically. Whenever possible, we seek out coffee that is fair trade, organic, and rainforest alliance certified. Beyond that we also give special considerations to coffee that supports worthwhile causes such as being woman-owned or supporting small farmers.

2) It has to be delicious

It has to be delicious. That speaks for itself but we will never sell a coffee that we wouldn’t drink ourselves. We know that whether something is delicious or not can be quite subjective, but we’ve developed pretty broad palates over our years of coffee tasting experience and we believe that our taste can cover the entire spectrum of unique coffee profiles.

Now, about us specifically. We’re a two-man operation consisting of Jacob Burdine and Jack Jaquish. We’re both Lexington locals that have been hobbyist roasters for the last 6 years. Over that time we’ve gone from roasting beans in cast iron pans, popcorn air poppers, and eventually to proper sample roasters. Jacob also ran a small roastery known as Bird’s Eye Coffee outside of the Chaotic Good cafe here in Lexington a few years back.

For other credentials, we’re both CQI certified Q Arabica graders (more info here) experienced in using the 2004 SCA cupping protocol, as well as certified in the new SCA Coffee Value Assessment system (more info here). We put these credentials to good use by going through the process of repeatedly roasting every bean under different profiles and roast levels, and then cupping the result to determine the roast profile we believe showcases that specific bean at its best.

Basically, we love coffee. We’ve invested serious time into our love of coffee both on the sensory side and the roasting side, and we’ve finally gotten to a point where we feel we can apply our expertise to take great green coffee and turn it into fantastic roasted coffee, and we want to share it with you.
